Turn it into <a href=\"https:\/\/www.healthygreenkitchen.com\/grilled-eggplant-and-cilantro-dip\/\">a dip<\/a> or make <a href=\"https:\/\/www.healthygreenkitchen.com\/creamy-bean-eggplant-casserole\/\">a quick casserole<\/a>. However you enjoy your fresh, seasonal eggplant, you\u2019ll also enjoy <a href=\"https:\/\/www.medicalnewstoday.com\/articles\/279359#benefits\">the health benefits<\/a>, like extra fiber, vitamins and antioxidants.<\/p>\n\n\n\n<p>All of that said, there\u2019s one thing that can really ruin your eggplant experience \u2014 a bitter veggie. Eggplants (or aubergines to our friends across the pond) are just one of those vegetables that, if you pick the wrong one, you\u2019re in for a bad (bitter) time. Pick a non-bitter eggplant variety<\/h2>\n\n\n\n<p>If you have your pick of <a href=\"https:\/\/www.growingproduce.com\/vegetables\/10-eggplant-varieties-youll-want-know\/\">eggplant varieties<\/a>, go for one of the varieties known to be less bitter than most. Heirloom Rosa Bianca eggplants, for example, are known to never be bitter. Likewise, the Asian Delite eggplant, which is on the skinnier, longer side, is also not bitter, as is the Fairy Tale variety. Want an eye-catching eggplant that ditches the bitter flavor? Harvest your home-grown eggplant at the right time<\/h2>\n\n\n\n<p>If you\u2019re already growing eggplant at home and you didn\u2019t pick one of the varieties known for their lack of bitter flavors, all is not lost. Just pick your eggplant at the right time. Don\u2019t let your eggplant sit too long as the riper the eggplant, the more bitter. Most eggplants are ripe in July or August. Let the eggplant sit in salt<\/h2>\n\n\n\n<p>Let\u2019s say you already have your eggplant on the chopping block and you need to cure its bitterness if you plan on serving dinner tonight. If you have an hour or two, let the eggplant \u2014 sliced, chopped or diced \u2014 sit in a heavy helping of salt for a bit (salting is our go-to hack for <a href=\"https:\/\/www.healthygreenkitchen.com\/make-cucumbers-taste-better\/\">cucumbers<\/a>, too). Soak the eggplant in milk<\/h2>\n\n\n\n<p>If you have less time, try soaking the prepped eggplant in milk for about half an hour. You\u2019ll not only get a less-bitter eggplant, but an eggplant that\u2019s creamier after cooking. Remove the seeds<\/h2>\n\n\n\n<p>Lastly, if you have no extra time at all, and need to cook your eggplant, stat, try removing the seeds before cooking.
