This is mostly due to not having access to my garden goodies this time of year, but it&#8217;s also because salads don&#8217;t generally appeal to me when it&#8217;s 15 degrees F. outside. Well here&#8217;s a beautiful, delicious salad that kicks all possible excuses to the curb, at least for me. I could eat this one day in and day out no matter what the calender or thermometer say.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2015\/01\/salad-2.jpg\" alt=\"Chopped Salad | Healthy Green Kitchen\" width=\"550\" height=\"811\" class=\"aligncenter size-full wp-image-35121\" srcset=\"https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2015\/01\/salad-2.jpg 550w, https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2015\/01\/salad-2-203x300.jpg 203w\" sizes=\"(max-width: 550px) 100vw, 550px\" \/><\/p>\n<p>This Chopped Salad is inspired by a new book called <a href=\"http:\/\/www.amazon.com\/gp\/product\/160774743X\/ref=as_li_tl?ie=UTF8&#038;camp=1789&#038;creative=9325&#038;creativeASIN=160774743X&#038;linkCode=as2&#038;tag=healthygreenkitchen-20&#038;linkId=2XILI57AG52JPPBR\">The Paleo Chef: Quick, Flavorful Paleo Meals for Eating Well<\/a><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/ir-na.amazon-adsystem.com\/e\/ir?t=healthygreenkitchen-20&#038;l=as2&#038;o=1&#038;a=160774743X\" width=\"1\" height=\"1\" border=\"0\" alt=\"\" style=\"border:none !important; margin:0px !important;\" \/>. As you may know, I am pretty vocal about not following a Paleo (or any other) diet and I know nothing about the author. I recieved this book from the publisher and  while I&#8217;ll be skipping over the author&#8217;s nutritional recommendations, the recipes look really tasty to me; it&#8217;s also beautifully photographed and I am a sucker for pretty cookbooks. <\/p>\n<p>I changed up the salad in the book by altering many of the proportions and leaving out the cucumbers, shredded cabbage, chile pepper, shallots, parsley, pumpkin and sunflower seeds because I didn&#8217;t have any. I included some chopped Cara Cara orange and raisins to sweeten the salad a bit, as well as basil and some carrot and pistachios for crunch. This recipe makes enough to serve 2 as a starter (or you can eat the whole thing yourself!).<\/p>\n<p>If you forego adding the dressing right away, you can double or even triple this recipe and store the dressing and salad separately for a few days. That way, whenever you&#8217;re ready for salad you can just spoon some out and add dressing to taste. Have fun with this recipe.
