I am being compensated for my recipe development and photography; all opinions are 100% mine.<\/em><\/p>\n<p>I grow <a href=\"http:\/\/localfoods.about.com\/od\/wintersquashpumpkin\/ss\/Types-Of-Winter-Squash_5.htm\">Cheese Pumpkins<\/a> in my garden every year and one of my favorite ways to use them is in this gorgeous-hued Pumpkin Soup. <\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2014\/11\/soup-1.jpg\" alt=\"Pumpkin Soup | Healthy Green Kitchen\" width=\"550\" height=\"749\" class=\"aligncenter size-full wp-image-34917\" srcset=\"https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2014\/11\/soup-1.jpg 550w, https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2014\/11\/soup-1-220x300.jpg 220w\" sizes=\"(max-width: 550px) 100vw, 550px\" \/><\/p>\n<p>I thought it would be a great fit for the \u201cPerfection Takes Time\u201d campaign because it\u2019s not a quickie recipe (just like FIJI Water isn\u2019t quickie water!). FIJI water is collected in a natural aquifer, the result of rainwater trickling down through layers of volcanic rock. This is a slow process that allows for the gathering of minerals and electrolytes along the way, and which results in an amazingly pure, great-tasting water. (You can learn more about FIJI Water <a href=\"http:\/\/www.fijiwater.com\/the-water\/\">here<\/a>.)<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2014\/11\/soup-3.jpg\" alt=\"Pumpkin Soup | Healthy Green Kitchen\" width=\"550\" height=\"370\" class=\"aligncenter size-full wp-image-34919\" srcset=\"https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2014\/11\/soup-3.jpg 550w, https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2014\/11\/soup-3-300x201.jpg 300w\" sizes=\"(max-width: 550px) 100vw, 550px\" \/><\/p>\n<p>The recipe, which I adapted from the Butternut Squash Soup with Brown Butter in <a href=\"http:\/\/www.amazon.com\/gp\/product\/0393061035\/ref=as_li_tl?ie=UTF8&#038;camp=1789&#038;creative=9325&#038;creativeASIN=0393061035&#038;linkCode=as2&#038;tag=healthygreenkitchen-20&#038;linkId=ICNJE7GZQ3ZAVYBH\">The Essential New York Times Cookbook<\/a><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/ir-na.amazon-adsystem.com\/e\/ir?t=healthygreenkitchen-20&#038;l=as2&#038;o=1&#038;a=0393061035\" width=\"1\" height=\"1\" border=\"0\" alt=\"\" style=\"border:none !important; margin:0px !important;\" \/>, requires the ingredients to rest at several stages so the flavors can develop. Here\u2019s how I recommend you time the making of this soup:<\/p>\n<p>Day 1: bake the pumpkin and prep the leeks, carrots, and shallots\/onion<br \/>\nDay 2: Prepare the soup then allow it to rest overnight<br \/>\nDay 3: Reheat the soup, make the fried sage leaves, and serve. <\/p>\n<p>This makes a great first course any day, but will also fit right in at a holiday meal this season.<\/p>\n<p>If you cannot find the variety of pumpkin that I used, substitute a winter squash such as Butternut.
