We talked about sauerkraut, pickles, and kimchi, and I demo&#8217;ed how to make kimchi. I used a recipe just a wee bit different from <a href=\"https:\/\/www.healthygreenkitchen.com\/one-simple-change-news-kimchi-recipe.html\">this one<\/a>&#8230;I&#8217;ve been making it over and over and I love it. One of the ways I like to eat it is mixed into this Asian-inspired Udon noodle soup.<\/p>\n\n\n\n<p>This soup is ridiculously tasty; it&#8217;s also infinitely variable. Here&#8217;s how I make mine, along with some of my favorite ways to change it up.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">How to Make Udon Noodle Soup<\/h2>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img loading=\"lazy\" decoding=\"async\" width=\"550\" height=\"395\" src=\"https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2014\/04\/soup-2_.jpg\" alt=\"udon soup with kimchi | healthy green kitchen\" class=\"wp-image-33749\" title=\"udon noodle soup\" srcset=\"https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2014\/04\/soup-2_.jpg 550w, https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2014\/04\/soup-2_-300x215.jpg 300w\" sizes=\"(max-width: 550px) 100vw, 550px\" \/><\/figure><\/div>\n\n\n\n<p>For 2 servings (or maybe 1: I&#8217;ve eaten the whole thing for dinner at once when I accidentally skipped lunch!), I start with 4 cups of chicken stock. I prefer to use homemade stock (here&#8217;s <a href=\"https:\/\/www.healthygreenkitchen.com\/homemade-chicken-stock.html\">my chicken stock recipe<\/a>; <a href=\"https:\/\/www.healthygreenkitchen.com\/how-to-make-vegetable-stock.html\">vegetable stock<\/a> is another option, and so is store-bought stock). <\/p>\n\n\n\n<p>Put the stock in a medium pot on the stove and add a few handfuls of kale leaves (torn away from the tough stems) plus the noodles. I like to use <a href=\"https:\/\/amzn.to\/32n36s4\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">fresh udon noodles that come vacuum packed<\/a>; but feel free to use whatever type of noodles floats your boat.<\/p>\n\n\n\n<p>Once the stock is boiling, reduce to a simmer and cook until the noodles are tender. If you want to poach some fish or 1-2 eggs right in there, go ahead (or cook in a separate pan, if frying them). <\/p>\n\n\n\n<p>At this point, take the soup off the heat and add whatever else you fancy for protein: cooked thinly sliced beef, or chicken, or maybe seafood (if you didn&#8217;t use the eggs\/fish mentioned above). <\/p>\n\n\n\n<p>Then garnish away (in the photo, you see generous amounts of chopped fresh cilantro, minced green onion, and lots of kimchi).<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Udon Noodle Soup Variations<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Drop in two whole eggs<\/strong> (or use just the egg yolks) after you take the soup off the heat, or top with 1-2 fried eggs<\/li><li><strong>Add cubed silken tofu<\/strong> (or firm regular tofu saut\u00e9ed in some coconut oil, rice vinegar, and tamari)<\/li><li><strong>Add thinly sliced beef or chicken<\/strong> (or try shrimp or scallops) that\u2019s been stir-fried with minced garlic in some coconut or sesame oil, rice vinegar, and tamari; or add a fish filet (I like salmon) that&#8217;s raw (even frozen) and allow it to cook while the soup simmers<\/li><li><strong>Mix it up noodle-wise<\/strong>: use thin or wide rice noodles (gluten free), cellophane noodles (also gluten-free), soba (gluten-free if made from 100% buckwheat) or ramen-style noodles instead of the udon. If you avoid carbs (why, oh why?), then try this with vegetable noodles made in a <a href=\"http:\/\/www.amazon.com\/gp\/product\/B0007Y9WHQ\/ref=as_li_qf_sp_asin_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B0007Y9WHQ&amp;linkCode=as2&amp;tag=healthygreenkitchen-20\">spiral slicer<\/a><img loading=\"lazy\" decoding=\"async\" width=\"1\" height=\"1\" border=\"0\" style=\"border: none !important; margin: 0px !important;\" src=\"http:\/\/ir-na.amazon-adsystem.com\/e\/ir?t=healthygreenkitchen-20&amp;l=as2&amp;o=1&amp;a=B0007Y9WHQ\" alt=\"\">.<\/li><li><strong>Vary the greens<\/strong>: any and all will work; sometimes I add wakame seaweed, too<\/li><li><strong>Change up the broth<\/strong> by using vegetable or fish stock; try adding some miso after you take it off the heat; you can also stir in some coconut milk and\/or add a few dashes of Asian fish sauce and a squeeze or two of fresh lime juice to boost the flavor. Drizzle with sriracha or a chili-garlic type sauce if you want it to be spicy.<\/li><li>You could <strong>skip the kimchi<\/strong>, but that would be a silly thing to do!<\/li><\/ul>\n\n\n\n<div
