I grow my own when the weather is cooperative, but this time of year, I rely on the supermarket for my cilantro stash. Cilantro often comes in such big bunches that I am always disappointed when it tends to wilt long before I get around to using it all. I frequently look for new ways to incorporate cilantro into my meals, but I&#8217;ve also long wondered if there was a better way I could be storing it to keep it fresh for longer. <\/p>\n<p>I found a recipe for an Olive, Pomegranate, and Walnut Relish featuring parsley in Alice Water&#8217;s new book: <a href=\"http:\/\/www.amazon.com\/gp\/product\/0307718271\/ref=as_li_qf_sp_asin_tl?ie=UTF8&#038;camp=1789&#038;creative=9325&#038;creativeASIN=0307718271&#038;linkCode=as2&#038;tag=healthygreenkitchen-20\">The Art of Simple Food II: Recipes, Flavor, and Inspiration from the New Kitchen Garden<\/a><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/ir-na.amazon-adsystem.com\/e\/ir?t=healthygreenkitchen-20&#038;l=as2&#038;o=1&#038;a=0307718271\" width=\"1\" height=\"1\" border=\"0\" alt=\"\" style=\"border:none !important; margin:0px !important;\" \/>. I mentioned this book in <a href=\"https:\/\/www.healthygreenkitchen.com\/chickpea-fennel-broccoli-rabe-soup.html\">a previous post<\/a>&#8230;it&#8217;s truly fabulous. My friend Jocelyn is an eco-artist and she sells them in <a href=\"http:\/\/www.etsy.com\/shop\/jocelynkeer\">her etsy shop<\/a>!)<\/p>\n<p>[cft format=0]<\/p>\n<p>In addition to the recipe, today I want to share with you what I recently learned from <a href=\"http:\/\/www.glad.com\/food-storage\/protection-pointers\/\" title=\"Glad\" rel=\"nofollow\">Glad<\/a> about storing herbs in order to keep them fresh. Let&#8217;s start with cilantro: the best way to keep your cilantro fresh for as long as possible is to trim off the ends of the herb stems as soon as you pick it or get it home from the farmer&#8217;s market\/grocery store, and then place the cilantro upright in a glass jar containing an inch or two of water. <\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2013\/10\/cilantro-1_.jpg\" alt=\"cilantro 1_\" width=\"550\" height=\"828\" class=\"aligncenter size-full wp-image-32710\" srcset=\"https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2013\/10\/cilantro-1_.jpg 550w, https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2013\/10\/cilantro-1_-199x300.jpg 199w\" sizes=\"(max-width: 550px) 100vw, 550px\" \/><\/p>\n<p>Then, cover loosely with an open large plastic bag (such as a Glad zipper bag) and place in the refrigerator. Parsley can be stored this way, as well, and so can basil (but don&#8217;t put basil in the refrigerator because the leaves will darken).<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2013\/10\/cilantro-2.jpg\" alt=\"cilantro 2\" width=\"550\" height=\"813\" class=\"aligncenter size-full wp-image-32711\" srcset=\"https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2013\/10\/cilantro-2.jpg 550w, https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2013\/10\/cilantro-2-202x300.jpg 202w\" sizes=\"(max-width: 550px) 100vw, 550px\" \/><\/p>\n<p>Herbs that are not so leafy, such as oregano, thyme, and rosemary, can be rolled in a damp towel, and placed in a unsealed zipper bag.
