The truth is, behind the scenes things have been anything but: for the past few weeks, I&#8217;ve been busy working on the final edits for my <em>One Simple Change<\/em> book (they were due yesterday). I&#8217;ve also been writing up a new book proposal!<\/p>\n<p>I&#8217;ve missed this space, though, so I am happy to be back, and today I want to share an intriguing Middle Eastern meat and vegetable casserole with you. The recipe comes from my friend Faith, who runs the gem of a blog <a href=\"http:\/\/www.anediblemosaic.com\/\">An Edible Mosaic<\/a>. It&#8217;s found in her first cookbook (a collection of Middle Eastern Recipes also called <a href=\"http:\/\/www.amazon.com\/gp\/product\/0804842760\/ref=as_li_ss_tl?ie=UTF8&#038;tag=healthygreenkitchen-20&#038;linkCode=as2&#038;camp=1789&#038;creative=390957&#038;creativeASIN=0804842760\">An Edible Mosaic<\/a><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/www.assoc-amazon.com\/e\/ir?t=healthygreenkitchen-20&#038;l=as2&#038;o=1&#038;a=0804842760\" width=\"1\" height=\"1\" border=\"0\" alt=\"\" style=\"border:none !important; margin:0px !important;\" \/>); the book was released a few months ago, and I&#8217;ve been dying to tell you all about it. <\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2012\/10\/stew.jpg\" alt=\"meat stew with pomegranate molasses\" title=\"middle eastern meat stew\" width=\"550\" height=\"399\" class=\"aligncenter size-full wp-image-29709\" srcset=\"https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2012\/10\/stew.jpg 550w, https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2012\/10\/stew-300x217.jpg 300w\" sizes=\"(max-width: 550px) 100vw, 550px\" \/><\/p>\n<p>Faith has a very personal connection to the Middle East, and Syria in particular. Her husband&#8217;s family has roots there and she&#8217;s traveled to the country several times. On each visit, Faith has spent much of the time in the kitchen of her mother-in-law (and various other family members and friends) learning how to cook the foods her husband grew up with and loves. Sadly, her in-laws recently had to leave Syria because of the civil war.<\/p>\n<p>Faith&#8217;s love and respect for the recipes she learned from her new family comes through beautifully in her book. She does an excellent job making difficult recipes seem completely accessible for any home cook, and the numerous photographs are just lovely (she&#8217;s a really talented photographer). I made at least six of the recipes the first week I received the book; My family loves Middle Eastern food, so I&#8217;ve gone back to make many more of them since.<\/p>\n<p>I decided to post about this meat and vegetable casserole (aka Kowaj) because the flavor combination is unusual, and it&#8217;s delicious. I&#8217;ve completely fallen for it! Choose grass-fed beef or lamb (I used organic, grass-fed beef that was sent to me from <a href=\"https:\/\/www.americasfarmstand.com\/\">America&#8217;s Farmstand<\/a>) for a tasty, nutrient-dense meal.
