Turns out sausage that isn&#8217;t stuffed into a casing isn&#8217;t mysterious or difficult to make at all: it&#8217;s ridiculously easy, in fact. And you don&#8217;t even need a meat grinder.<\/p>\n<p>Before this challenge, I had no idea you could use a food processor to grind meat. But you can! My pork shoulder was pretty fatty so I opted not to add any&#8230;it didn&#8217;t need it. I think it&#8217;s going to depend on the cut of pork that is available to you, and the amount of fat that&#8217;s naturally present. Sausage is not meant to be lean, so do add fat if necessary. <a href=\"http:\/\/www.saveur.com\/article\/Recipes\/Breakfast-Sausage-Patties\">This recipe from Saveur<\/a> says you should use a mixture of pork and fat so that the mixture is 70% lean to make sausage&#8230;I estimated that my pork was about that on it&#8217;s own.<\/p>\n<p>For the sausage seasonings, I used a little muscovado sugar, dried sage, crushed red pepper, fresh parsley, and sea salt. That&#8217;s it. You could certainly add more herbs or spices but I wanted to keep this first batch simple. After testing a teeny patty to make sure I liked the seasonings&#8230;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2011\/05\/testing-patty.jpg\" alt=\"\" title=\"testing patty\" width=\"550\" height=\"315\" class=\"aligncenter size-full wp-image-23226\" srcset=\"https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2011\/05\/testing-patty.jpg 550w, https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2011\/05\/testing-patty-300x171.jpg 300w\" sizes=\"(max-width: 550px) 100vw, 550px\" \/><\/p>\n<p>&#8230;I upped the salt and red pepper a bit, then formed a bunch of patties.
