I started with about 30 tomatoes, sliced in half and sprinkled with sea salt&#8230;<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter\"><img loading=\"lazy\" decoding=\"async\" width=\"550\" height=\"365\" src=\"https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2010\/09\/sliced-san-marzanos.jpg\" alt=\"sliced san marzanos\" class=\"wp-image-15275\" title=\"sliced san marzanos\" srcset=\"https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2010\/09\/sliced-san-marzanos.jpg 550w, https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2010\/09\/sliced-san-marzanos-300x199.jpg 300w\" sizes=\"(max-width: 550px) 100vw, 550px\" \/><\/figure><\/div>\n\n\n<p>&#8230;and I dehydrated my tomatoes at 105\u00b0F. This is the temperature at which the enzymes are best preserved; this temperature also mimics a very hot day. It takes a while to completely dry the tomatoes at 105\u00b0F&#8230;around 36 hours.<\/p>\n\n\n\n<p>If you set your dehydrator to a higher temperature, like 150\u00b0F, it will of course take less time. Keep them in a glass jar (or a zip lock bag with the air pushed out), and they should last for several months. For longer-term storage, keep bags of these in the refrigerator or freezer.<\/p>\n\n\n\n<p>I personally like to keep my dehydrated tomatoes in a tightly capped jar, covered with olive oil.<\/p>\n\n\n\n<p>When stored this way, dried tomatoes will last quite a long time at room temperature, so you can enjoy them throughout the colder months. Dried tomatoes that have been re-hydrated (or dried tomatoes packed in oil) are wonderful when blended into dressings or pesto.
