Elevate your cookie game with this special treat!<\/em><\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter\"><img decoding=\"async\" src=\"https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2015\/03\/Marzipan-Layer-cookies-7-640x960.jpg\" alt=\"a batch of stamped marzipan layer cookies arranged on a plate, with some cookies scattered outside the plate\n\" class=\"wp-image-1253\"\/><\/figure>\n\n\n\n<p>I cannot tell you how much I am looking forward to a 4-day weekend! <\/p>\n\n\n\n<p>Having four&nbsp;days off when not having to take any vacation days makes it even more exciting. <\/p>\n\n\n\n<p>Of course, it&#8217;s probably going to be raining, but what can you do? <\/p>\n\n\n\n<p>I&#8217;ll probably be mostly in the kitchen anyway, which is no bad thing! <\/p>\n\n\n\n<p>With all the mini egg recipes around, I thought I would bring you something a little different that you could try this Easter. <\/p>\n\n\n\n<p>I haven&#8217;t been able to find any mini eggs in Switzerland *sad face*.<\/p>\n\n\n\n<p>Marzipan is traditionally eaten in the form of a &#8220;Simnel Cake&#8221; at Eastertime in the UK, and being a lover of <a title=\"Plum and Almond Tart\" href=\"https:\/\/www.healthygreenkitchen.com\/plum-and-almond-tart\/\" target=\"_blank\" rel=\"noopener\">all things almond<\/a>&nbsp;I wanted to try something new. <\/p>\n\n\n\n<p>After all, I&#8217;m sure there will be plenty of chocolate eggs around.<\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter\"><img decoding=\"async\" src=\"https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2015\/03\/Marzipan-Layer-cookies-4-640x960.jpg\" alt=\"overhead view of stamped marzipan layer cookies scattered on a white cloth dusted with dry flour, accompanied by a rolling pin\n\" class=\"wp-image-1256\"\/><\/figure>\n\n\n\n<p>These cookies are sweet and moreish. The gooey layer of marzipan in the middle keeps things&nbsp;soft and flavorful, and it&#8217;s encased by layers of crisp golden brown cookie for added texture.<\/p>\n\n\n\n<figure placed next to the tray.\n\" class=\"wp-image-1260\"\/><\/figure>\n\n\n\n<p>To add something different, I decided to try stamping a pattern onto the cookies and I am so happy with how they turned out! <\/p>\n\n\n\n<p>If you aren&#8217;t really a fan of fancy decorating then this would be the perfect option for you. <\/p>\n\n\n\n<p>I used some little stamps and created a pattern that turned out to look a little like lace. &nbsp;<\/p>\n\n\n\n<p>I love that some stamps come out blotchy and some solid, it adds interest to the design and when they are all together on a plate they look so inviting. <\/p>\n\n\n\n<p>Also how cute is that &#8220;Handmade with Love&#8221; stamp? <\/p>\n\n\n\n<p>I mean who wouldn&#8217;t want to receive a cookie that says &#8220;Handmade with Love&#8221;?!<\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter\"><img decoding=\"async\" src=\"https:\/\/www.healthygreenkitchen.com\/wp-content\/uploads\/2015\/03\/Marzipan-Layer-cookies-3-640x960.jpg\" alt=\"close-up view of freshly baked stamped marzipan layer cookies, some arranged on a baking tray, and others placed outside the tray\n\" class=\"wp-image-1257\"\/><\/figure>\n\n\n\n<p>The gel food coloring is the best thing to use for the stamping because it&#8217;s thick enough to hold its shape. <\/p>\n\n\n\n<p>Liquid food coloring wouldn&#8217;t stick to the stamp and you would end up with a bit of a soggy blob rather than a nice pattern. <\/p>\n\n\n\n<p>If you can find some Easter-themed stamps, that would be even better, but really anything you have is fine. <\/p>\n\n\n\n<p>The great thing about the stamps is you can adapt these cookies to fit any occasion.<\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter\"><img decoding=\"async\" href=\"https:\/\/www.healthygreenkitchen.com\/lemon-thyme-mint-cookies\/\" target=\"_blank\" rel=\"noopener\">Lemon Thyme and Mint cookies<\/a>. <\/p>\n\n\n\n<p>The cookie itself is quite crispy, but the layer of marzipan really softens it up, perfect with a cup of tea!<\/p>\n\n\n\n<p>What do you have planned for the Easter weekend? <\/p>\n\n\n\n<p>Hopefully, you&#8217;ll get to enjoy some days Use a cutter of your choice to cut out biscuits and place on a baking sheet lined with parchment paper.
